If you have a sweet-tooth like me, you are going to adore this recipe! It's a perfect 1-pot, weekday meal and is packed with flavour! I used pork loin steaks which you can normally find at the supermarket or any local butchers. Make sure to cook the pork on a low heat and slowly in the sauce so that the meat does not become tough. The caramelised onions and apple are truly the co-stars of this dish, creating a wonderful sweet flavour and making this dish warm and comforting. You can serve this dish alongside roasted potatoes, steamed vegetables, rice or even some fresh bread. Hope you enjoy!

Ingredients:
4 pork steaks, approx 150g each (trimmed off excess fat if preferred)
2 apples, peeled, cored and thinly sliced
2 red onions, thinly sliced
4 cloves of garlic, crushed
1tbsp soft brown sugar
2 ½ tsp balsamic vinegar
2 tsp maple syrup
2 tsp dijon mustard
Splash of white wine
100ml chicken stock
Oil
Spices and herbs: Salt, Pepper, Paprika, Oregano, Parsley, Sage, 1 dried Bay leaf
Method:
Pat the pork steaks dry and then rub with some oil and season with the salt, pepper, paprika, oregano and parsley to taste.
Heat approximately 1tbsp of oil a large, non-stick frying pan. Fry the pork steaks for roughly 2 minutes on each side, until they have browned. Then, transfer them to a plate.
In the same pan add a little more oil, the onions and a good pinch of salt. Stirring occasionally, allow the onions to cook on a low-medium heat, slowly, for 25-30 minutes. They should become soft and slightly golden. If they begin to burn or stick to the pan add some water and stir.
Next, add the sugar and balsamic vinegar to the onions. Cook on a low heat for 5 minutes and stir occasionally. You should have a sticky mix and the vinegar will reduce.
Add the apples, garlic, mustard, maple syrup and a splash of white wine to the pan with the onions. Simmer for a few minutes until the wine reduces.
Next add the chicken stock, bay leaf and sage leaf and simmer for 5 minutes stirring occasionally. Season with salt, pepper and the suggested herbs and spices to taste.
Finally add the pork steaks and cook slowly on a gentle heat for 15 minutes or until the sauce has reduced further and the pork is tender and cooked through.
Serve with your preferred sides and enjoy!
