Smashed Avocado with Feta, Peppers and Pomegranate

Serves 1 | 10 minutes | Very Easy


An incredibly easy, filling and eye appealing lunch! Full of fibre, healthy fats and a touch of sweetness too. This is the perfect speedy lunch when you want a sweet and savoury mix that will keep you full for the afternoon.


Ingredients

  • 1/2 avocado, peeled and mashed

  • Fresh bread (mini baguettes or ciabatta loaves work best)

  • 30-40g feta

  • 3 tbsp (approximately 50g) pomegranate seeds *

  • 1/2 sweet pointed better, sliced

  • Balsamic vinegar glaze, chilli flakes, salt and pepper to season.


Method:

1. Mash half an avocado and spread over the fresh bread

2. Next, crumble over 30-40g of feta and then add the pomegranate seeds and sweet pointed pepper.

3. To finish, drizzled over some balsamic vinegar glaze and season to taste with salt and pepper and chilli flakes

4. You can also add pine or cashew nuts for an optional topping as a further protein and healthy fat source.



*Note: You can purchase pomegranate seeds individually, however, often purchasing the entire fruit is cheaper. Pomegranate seeds are very easy, albeit messy, to remove from the fruit. Simply cut the pomegranate fruit into quarters and gently unfold the white flesh inside and remove the seeds. It's like a fun treasure hunt! Be careful not to tear into the fruit or seeds otherwise it will create a big mess.
