Chocolate Orange & Ginger Shortbread

Making biscuits and cookies is so therapeutic and I love to experiment with different flavour combinations! I had previously made chocolate orange shortbread and then decided to make another version using ginger in the mix too. Thus, chocolate orange and ginger shortbread was born! These are really tasty and fun to make and you can roll out the dough to cut the shortbread into your favourite shapes. Take a look at the images below which show you some of the methods and how the dough should look after certain steps. Hope you all enjoy these as much as I do!


Makes: 10 small circular biscuits | Total Time: 30 minutes | Easy

Ingredients

140g Plain flour (and extra for dusting)

90g Butter (cut into cubes)

40g Golden Caster sugar (and extra for dusting)

1/2 tsp Ground ginger

1 1/2 tbsp Juice from one orange

Zest of one orange

25g Baking Chocolate (grated)



Method:

  1. Preheat oven to 180°C/ Gas mark 5. Line a baking tray with baking parchment.

  2. Measure out the flour and butter (cut into chunks/cubes) into a large, clean bowl

  3. Using the tips of your fingers, mix together the flour and butter so the mixture begins to look like breadcrumbs

  4. At this point, add in the sugar and continue mixing with your fingertips. While mixing in the sugar gently begin to press the dough together

  5. Add the grated chocolate, orange zest, orange juice and ginger. Mix together using your hands or a spoon. You should now begin to bring the dough together

  6. The dough should be soft but not sticky or too crumbly. If it is too wet and sticking to the sides of the bowl add a touch more flour. If it is too dry add a small amount of water

  7. Tip the dough out onto a lightly floured surface and form it into a ball

  8. Gently roll out the dough to approximately 0.5cm thick (if you choose to keep it thicker, please note it may take longer to cook and you will make fewer biscuits).

  9. Using cutters of your choice cut the dough and place the pieces onto the preprepared baking tray.

  10. Bake for 20-25 minutes until the biscuits are slightly golden. Remove from the oven and gently sprinkle over some more sugar if desired.

  11. Allow to cool before serving. Enjoy!
